Directions:
- In a large sauté pan, prepare 6 EatGȔD Falafel following the stove top cooking instructions
- Remove Falafel from pan and drain the excess oil from pan
- With stove on medium heat, add diced red pepper and stir occasionally for two minutes
- Add crushed garlic and minced ginger, and cook for one minute more.
- Add the squash, pea pods, and curry powder; stir and cook for 2 more minutes.
- Carefully stir in the coconut milk and bring to a rolling boil.
- Once boiling, immediately turn down heat and add the cooked falafel balls
- Let simmer for 1 additional minute and serve immediately
- Garnish with fresh cilantro and a lime wedge
- Serves 2-4
